Grilled Asparagus Wrapped In Proscutto |

If you're grilling, this is a good side dish. I spent 25 years as a vegan, I for whatever reason, gave it up to try this. Ingredients:
40-45 spears, trimmed asparagus spears |
1 tablespoon olive oil |
oil to coat the grill. |
4 ounces, about 8 slices, thinly sliced prosciutto |
1/4 teaspoon ground black pepper |
1 tablespoon fresh grated parmesan cheese |
honey mustard or ranch dressing for drizzle |
Directions:
1. Preheat the grill to medium with the grate at the lowest setting. 2. On a rimmed baking sheet, or in a large plastic bag, toss the asparagus with the olive oil. 3. Lightly coat the the grate with oil. 4. Arrange the asparagus on the grill perpendicular to the bars of the grate. 5. Grill until just tender but not limp, about 5 minutes. 6. Use tonges to roll the asparagus once or twice during cooking. 7. Lay a slice of prosciutto horizontally on a work surface. 8. Place 4 to 6 spears over ther prosciutto near the short edge. 9. Sprinkle the asparagus with some pepper. 10. Tightly roll the proscuitto over the asparagus on a slight diagonal, creating a tight bundle. 11. The sips of the asparagus should still be showing. 12. Sprinkle the bundled with parmesean. |
