Grilled Asparagus and Tomatoes |

Ingredients:
1 pound fresh asparagus, trimmed |
4 plum tomatoes, halved |
1 tablespoon olive oil |
cooking spray |
1/4 teaspoon salt |
1/8 teaspoon black pepper |
1/2 teaspoon grated lemon rind |
Directions:
1. Prepare grill. 2. Place asparagus and tomato halves in an 11 x 7–inch baking dish. Drizzle vegetables with oil; toss gently to coat. Place vegetables on a grill rack coated with cooking spray. Grill asparagus 3 minutes on each side; grill tomato 1 minute on each side. Return asparagus and tomato to dish. Sprinkle vegetables with salt, pepper, and lemon rind. |
