Grilled Asparagus And Onions |

This is so good along side grilled steak or just about anything. Living in South Texas we cook as much as possiable out side! Had these over the Memorial Weedend and every one raved. The Aspargus takes on a nutty flavor. Ingredients:
1 pound fresh asparagus |
1 tablespoon vegetable oil |
1 garlic clove, minced |
1 sweet onion sliced about 1/2 inch thick |
sea salt |
fresh ground pepper |
Directions:
1. Snap off and discard tough ends of asparagus; remove scales with a vegetable peeler, if desired. 2. Stir together 1 Tbsp. vegetable oil and garlic. 3. Combine asparagus with vegetable oil mixture in a large bowl, tossing to coat. 4. Sprinkle evenly with salt. 5. Brush sweet onion slice evenly on both sides with 1 tsp. vegetable oil. 6. Grill onion slice and asparagus, without grill lid, over medium heat. Grill onion slice 4 to 5 minutes on each side or until tender. 7. Grill asparagus 2 to 3 minutes on each side or until tender. 8. Arrange on platter, sprinkle with the pepper and serve. 9. It looks real pretty on a platter with fresh sliced tomatoes around it. |
