I love entertaining on the deck in the warm summer months. I make these as an appetizer on the grill before I put the steaks (or whatever) on to grill. A nice white wine and guests are happy. Ingredients:
1 cup mayonnaise |
1/4 cup apricot preserves |
1 tablespoons tamari sauce |
1 tablespoon dijon mustard |
1 clove garlic, minced |
1/2 teaspoon ground ginger (i use 1 1/2 teaspoons fresh, grated) |
8 shirmp kabobs (wooden skewers with 3 large peeled shrimp each, 2 lemon wedges each and 2 green onions, cut into 2 inch pieces each) |
Directions:
1. Combine mayonnaise, preserves, tamari sauce, mustard, garlic and ginger. Whisk together. 2. Remove 1/3 cup and set aside. 3. Brush skewers with remaining sauce. 4. Grill just until shrimp turn pink. 5. Serve with remaining sauce. |
