A nice side dish addition. Ingredients:
6 apricots, halved and pitted |
1 teaspoon honey |
1 tablespoon olive oil |
cooking spray (for frying) |
1/8 teaspoon kosher salt |
1/8 teaspoon black pepper |
1 teaspoon fresh thyme |
Directions:
1. Preheat grill to medium-high heat. 2. Combine olive oil, and honey, and brush over cut sides of apricots. 3. Arrange apricots, cut sides down on a grill rack coated with cooking spray. 4. Remove from grill, and sprinkle with salt, and pepper, and garnish with thyme. |
