Grilled and Smoked Tomato Relish |

Ingredients:
hickory chips, soaked in water |
8 plum tomatoes, halved |
1/3 cup diced shallots |
1/4 cup capers |
3 tablespoons red wine vinegar |
1/3 cup chopped fresh basil |
1/4 cup extra virgin olive oil |
salt and pepper |
Directions:
1. Place smoking chips in a stovetop smoker. Add the tomatoes and cook for about 7 minutes. Chop into small dice and mix in bowl with remaining ingredients and season to taste. |
