Good summer recipe for cooking on the barbecue, can also be cooked under the grill or in the oven. Ingredients:
3 tablespoons olive oil |
1 teaspoon chili powder |
4 tablespoons coriander or 4 tablespoons parsley, chopped |
1 kg sweet potato, scrubbed and thickly sliced |
Directions:
1. Put the oil, herbs and chilli powder in a ziploc bag big enough for the sweet potatoes. Add the sweet potatoes and seal. Toss the bag around to coat them in the flavoured oil. 2. Cook for about 20 minutes on the barbecue or under a hot grill or in a hot oven until soft when tested with a knife. |
