It's quick and easy to make for breakfast. It gives me a healthy start on my morning and sometimes I eat the leftovers for lunch. You can eat it any time of the day! Ingredients:
1/2 cup vanilla yogurt (fat free) |
1 tsp fresh parsley (chopped) |
2 eggs |
1 onion |
1/2 cup green bell pepper |
1 1/4 cups biscuit baking mix |
1/2 cup red bell pepper |
1 tomato (small, diced) |
1 tbsp vegetable oil |
Directions:
1. Using a medium bowl, mix together the yogurt and eggs with the biscuit baking mix. 2. On medium heat, use a medium-sized skillet to heat the oil. 3. Stir fry the onion, and the green and red bell peppers until it is tender and stir it into the batter. 4. Use a frying pan (or griddle) and oil it lightly and put it on medium heat. 5. Using a 1/4 cup for each pancake, transfer the batter on the griddle. 6. Brown the pancake on each side. Serve it up hot and garnish it with parsley and tomatoes. Have a wonderful breakfast! |
