This is a traditional South African recipe. The quantity depends on for how many people you make. It is one of those dishes that is tastier the next day - but don't keep it longer than that as it tends to get sour. Read more . I've made the cooking time 2 hours - that is for the stock the actually cooking of the vegtables is approx 20min. Ingredients:
lamb neck stock |
green beans (diced) |
potatoes (peeled and quarted) |
onions (diced) |
salt |
milk or cream |
pepper |
butter |
Directions:
1. Prepare a good stock (I like to use lamb neck) or you can use ready made stock - but it must be top quality 2. Add green beans, onions and potatoes to stock. 3. Salt (be careful not to add too much as the stock is already salty) 4. Boil until green beans are cooked and potatoes soft and water/stock evaporated 5. Mash the green beans and potatoes (I like it rustic - not to finely mashed) 6. Add a bit of milk or cream (to blend the vegtables) 7. Pepper 8. Butter |
