Good,when your tomatoes first come on,or at the tail end of the growing year. Ingredients:
pastry for double crust (10 pie) |
1 and 3/4 cups sugar |
1/2 cup flour |
1/4 teaspoon salt |
1 teaspoon allspice |
4 cups peeled small green tomatoes,cut in wedges |
2 cups seedless green grapes,halved |
1 teaspoon grated lemon peel |
2 tablespoon daiquiri cocktail mix |
1/4 cup light rum |
4 large mint leaves,minced |
3 tablespoon butter, melted |
Directions:
1. Place on of the pie crust in pie pan. 2. Combine sugar,flour salt,allspice,mix well. 3. Add tomatoes and grapes,stir gently to coat with the flour mixture. 4. Add remaining ingredients 5. Spoon into pastry shell 6. Place other crust on top,Seal,Cover edges with foil. 7. Bake at 450 degrees for 15 minutes 8. Reduce heat to 350 degrees and bake 30 minute. 9. Remove foil,and continue baking for another 15 minutes. 10. It is a good pie,alot of people are apprehensive in trying this because of the green tomatoes in a dessert pie.I beleive if you try it that you will think it different, and enjoy it. |
