A great way to use green tomatoes when your garden explodes! Delicious on burgers off the grill or for a picnic : ) Ingredients:
4 cups chopped onions |
8 cups chopped green tomatoes (25/30 medium) |
6 each chopped & seeded red peppers |
6 each chopped & seeded green peppers |
1/2 cup canning salt |
1 tablespoon celery seed |
1 1/2 teaspoons turmeric |
4 cups white sugar |
3 cups cider vinegar |
2 cups water |
Directions:
1. Mix onions, tomatoes and peppers in a large bowl. Sprinkle 1/2 cup canning salt over all. Let stand in fridge overnight - rinse and drain well in the morning. 2. Add the celery seed, turmeric, sugar, vinegar and water to tomato mixture in a large pot. Simmer contents of pot on stove until thick - about 2 hours. 3. Spoon hot mixture into jars (you will need at least 6 to 8 pint jars) - use a slotted spoon to take out bubbles. Don't add too much juice! 4. Use a knife to get additional air bubbles out of jars before sealing. Put jars into a hot water bath for 20 minutes. |
