Here is another recipe I found in ARKANSAS FARM FAVORITES. Ingredients:
2 gal.green tomatoes |
1 medium head cabbage |
6 green bell peppers |
6 large onions |
1/2 cup salt |
2 cups white vinegar |
1 cup water |
1 cup sugar |
1/2 teaspoon turmeric (optional) |
1 (1 1/4 ounce) box whole mixed pickling spices |
Directions:
1. Chop vegetables and sprinkle with salt. stir well; let set overnight (approximately 8 hours). stir and drain off salt water. mix vinegar, water, sugar, alum and turmeric; pour over chopped vegetables. tie pickling spice in rag and put in mixture. cook slowly for 2 hours, stirring often. put in sterilized, hot jars and seal while hot. process in a boiling water bath for 5 minutes. 2. prep time includes overnight. |
