Green Tomato Pie

The beginning of fall is heralded by a green tomato pie. It is a delightful dessert.
Ingredients:
4 -5 really green tomatoes (2 1/2 cups coarsely grated)
1 1/2 cups brown sugar
3 tablespoons flour
1/4 cup minced candied ginger
1/2 cup golden raisin
1/4 teaspoon salt
1/4 teaspoon allspice
1 fresh lemon rind, of grated finely
6 tablespoons lemon juice
1 for an 8 inch pastry for double-crust pie
Directions:
1. Put tomatoes through a coarse grater or a food processor's large shredder.
2. Put in a colander and let drain overnight.
3. Prepare double pie crust.
4. Line 8-inch pie pan with half.
5. Roll out second half and set aside.
6. Mix remaining ingredients with tomatoes.
7. Place in pie shell and cover with top crust.
8. Prick holes in crust.
9. Bake in 450 degree oven for 10 minutes.
10. Reduce heat to 350 degrees and bake 40 minutes longer or until golden brown.
