Green Tomato Chocolate Cake |

Unusual ingredients for a chocolate cake? The green tomatoes keep it moist and delicious. and no one will even know they are in there unless you tell them. Ingredients:
2/3 cups softened butter |
1 3/4 c. sugar |
3 room temp. eggs |
1 teasp vanilla |
2 tsp grated orange peel |
1/2 c. unsweetened cocoa |
2 1/2 c. all-purpose flour |
2 tsp. baking powder |
2 tsp baking soda |
1 tsp salt |
1 tsp cinnamon |
1 c. cultured buttermilk |
1 c. pureed seeded green tomatoes (about 3 med. tomatoes) |
1 cup broken pecans |
glaze |
2 c. confevtioners sugar |
3 tbsp orange juice |
grated peel of 1 orange |
Directions:
1. In a mixing bowl cream together butter and sugar unteil light and fluffy. 2. Add eggs one at a time. 3. Beat well after each addition. 4. Stir in vanilla and orange peel. 5. Combine cocoa, flour, baking powder and soda, salt and cinnamon. 6. AAdd to creamed mixture alternately with buttermilk and tomatoes. 7. Fold in pecans. 8. Turn into a greased and lightly floured fluted 10 inch tube pan. 9. Bake at 350 for 1 hour or when cake testsas done. 10. Invert onto rack until completely cool. 11. - 12. GLAZE 13. - 14. Combine glaze ingredients in a small bowl and mix well. 15. Drizzle over cooled cake. |
