Easy way to use up those end-of-the-garden green tomatoes! Makes a moist cake that tastes like apples. May add walnuts and/or raisins for a richer taste. Ingredients:
1/2 cup butter, softened |
2 eggs |
1 cup sugar |
1 cup brown sugar, packed |
2 cups green tomatoes, shredded |
1 teaspoon vanilla |
2 cups flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 1/2 teaspoons cinnamon |
2 tablespoons sugar |
1/2 teaspoon cinnamon |
cooking spray |
Directions:
1. Combine butter and eggs. Beat until fluffy, at least 5 min with electric beater on high speed. 2. Fold in the shredded green tomatoes and vanilla. 3. Sift together the flour, baking powder, salt, and 1 1/2 tsp cinnamon. Stir into tomato mixture until well combined. 4. Pour mixture into a 9x13 baking pan that has been sprayed with baking spray. 5. Combine the 2 T sugar and 1/2 tsp cinnamon; sprinkle over top of cake. 6. Bake at 350 for about 30-35 minute. |
