Green Tomato Bread Or Anything Green Bread |

I had this since the 7o's and many similarites are found on the net. I have substituted green apple, zucchini, avocado and lettuce in the recipe. All come out great so I like to call this quickbread the anything green bread! Read more !!!! Makes two loaves and a great recipe for the leftover green stuff Ingredients:
dry |
3 cups flour |
2 cup sugar ( may be part white and part brown sugar ) |
2 tsp cinnamon |
1/2 tsp baking powder |
1 tsp baking soda |
1/2 tsp salt |
wet |
2 large eggs |
1 cup oil |
2 tsp vanilla |
2 cups chopped green tomato ( with the liquid ), use the food processor |
or 2 cups chopped apples |
or |
2 cups shredded zucchini |
or |
2 cups finely chopped green lettuce ( non bitter kind ) |
1 cup chopped nuts |
or |
1 cup golden raisins |
or |
1/2 cup nuts and 1/2 cup raisins |
or |
1 cup chopped other dried fruits such as dried apricots, cranberries etc |
Directions:
1. Combine all the dry ingrdients in a bowl 2. Combine all the wet ingredients together 3. Blend both mixtures well by hand with wooden spoon 4. Blend in the tomatoes, nuts and raisins 5. Grease and flour well, 2 loaf pans ( 8 x 4 ) 6. Divide mixture in the pans 7. Bake in a 350F oven about one hour or tested done in the center. 8. Cool on rack at least 15 minutes before removing 9. Cool completely 10. Wrap in foil overnight to blend flavors before slicing 11. May be frozen |
