Green Tomato and Peach Relish |

In 'Frank Stitt's Southern Table' Ingredients:
1/2 large vidalia onion, cut into thick slices |
2 large firm green tomatoes |
1 lime |
1 firm peach, peeled, pitted, and cut into 1/4-inch dice (not too ripe peach) |
1 jalapeno pepper, roasted, peeled, seeded, and diced |
2 scallions, cut into 1/4-inch slices |
fresh ginger, peeled and grated (2-inch piece) |
2 tablespoons extra virgin olive oil |
kosher salt |
fresh ground black pepper |
finely chopped chives (or fresh parsley or fresh basil, or fresh cilantro) |
Directions:
1. Prepare a hot grill or preheat the broiler. 2. Grill or broil the onion slices for 3-4 minutes per side, until blackened and charred. 3. Cut the tomatoes into wedges and remove the pulp and seeds, leaving the tomato flesh. 4. Cut the flesh into 1/2-inch dice and place in a small bowl. 5. Grate the zest from 1/2 the lime, then halve the lime. 6. Add the peaches to the tomatoes, along with the lime zest and juice of 1/2 lime. 7. Add the jalapeno, grilled onion, scallions, and ginger ; toss to mix. 8. Add the olive oil and salt and pepper. 9. Adjust the seasonings as necessary-more lime juice may be needed. 10. Add the fresh herb if desired. |
