This is great with grilled salmon or any of your other favorite grilled fish. Ingredients:
2 tablespoons olive oil |
1 tablespoon dijon mustard |
2 tablespoons lemon juice |
3 garlic cloves, minced |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1/4 cup packed fresh basil leaf |
1/4 cup packed dill sprigs |
1/4 cup packed parsley sprig |
4 ounces fresh spinach |
1/4 cup plain yogurt |
Directions:
1. In small bowl, blend oil, mustard, lemon juice, garlic, salt and pepper until well mixed. 2. In food processor or blender, process basil, dill and parsley until minced. Add spinach; process until pureed and smooth. Add yogurt. 3. With machine running, gradually add oil mixture; process until thick mayonnaise consistency. 4. Refrigerate. 5. Serve over grilled fish. |
