Green Salad with Spiced Walnuts |

Ingredients:
2 teaspoons sugar |
1 teaspoon olive oil |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon cumin |
1 cup shelled walnut halves, toasted |
3 tablespoons olive oil |
3 tablespoons red wine vinegar |
2 teaspoons grated orange zest |
2 tablespoons orange juice |
salt and pepper |
1 large head or 2 small heads red-leaf lettuce |
2 celery ribs, thinly sliced |
1 granny smith apple, cored and thinly sliced |

Directions:
1. Make walnuts: Whisk sugar, olive oil, 2 Tbsp. water, salt, cinnamon and cumin in a large skillet. Add walnuts and toss to coat. Cook over medium-low heat, stirring constantly, until nuts are crisp and slightly glazed, about 2 minutes. 2. Make salad: Whisk olive oil, vinegar, orange zest and juice in a large bowl. Season with salt and pepper. Tear lettuce into large pieces and pile on top. Add celery and apple; toss. Top with walnuts and serve. |
