Green Salad With Pomegranate and Mandarin |

This is adapted from a Paula Deen recipe I had at a friends home. We just love it, it is light and different and delicious! Ingredients:
2 cups iceberg lettuce, torn in bite sized pieces |
1 green onion, finely chopped |
2 celery ribs, chopped |
1/2 cup pomegranate seeds |
1/2 cup chopped mandarin orange section |
1/2 cup light oil-and-vinegar dressing (or as needed) |
1/4 cup balsamic vinegar |
Directions:
1. Mix all greens together in a large salad bowl, adding more lettuce if need be. 2. Add pomegranate seeds and mandarin orange pieces. 3. Mix in enough oil and vinegar salad dressing to taste, drizzle with balsamic vinegar. 4. Toss lightly and enjoy! |
