This is a recipe I learned to make from my grandfather. I love the spicy flavor but you can use less peppers to make it milder. Ingredients:
1 cup green onions, chopped |
3/4 cup bell pepper, diced |
3 tablespoons vegetable oil |
1 cup rice |
1/4 cup parsley, chopped |
3 cups chicken broth |
1 teaspon salt |
1/2 teaspoon black pepper |
1 fresh or 2 canned jalapenos, chopped |
Directions:
1. Cook onions and bell pepper in oil until soft. 2. Add rice, parsley, chicken broth, salt, pepper and jalapenos. Mix well. Pour into a 2 quart dish with lid. Cover and bake at 350 degrees for 30 to 40 minutes until rice is done and liquid is absorbed. Toss with a fork and serve. |
