This is by far one of my favorite rice recipes. It goes so well with chicken, pork or seafood. I usually serve it with fajitas. Yummy Ingredients:
1 pound tomatillos husked washed and coarsely chopped |
1 yellow onion coarsely chopped |
3 garlic cloves |
1-1/2 cups fresh cilantro leaves |
1-1/4 cups chicken stock |
2 tablespoons canola oil |
2 cups long grain rice rinsed |
2-1/2 teaspoons salt |
Directions:
1. In a deep bowl combine the tomatillos, onion, garlic, cilantro and stock. 2. Using an immersion blender puree the mixture until smooth then set aside. 3. In a saucepan over medium heat warm the oil. 4. Add the rice and salt and cook stirring constantly for 3 minutes. 5. Add the tomatillo mixture and stir to combine. 6. Bring to a boil then cover and reduce heat to low. 7. Cook until all liquid has been absorbed and the rice is tender about 25 minutes. 8. Remove from the heat and let stand for 10 minutes then transfer to a serving bowl. |
