A recipe copied from somewhere years ago. A good side dish with pork. Ingredients:
2 (4 ounce) cans green chili peppers |
2 cups chicken broth |
1 cup chopped fresh parsley |
1 medium onion, chopped |
1/2 teaspoon chopped garlic |
2 tablespoons olive oil |
1 cup brown rice |
1/2 teaspoon salt |
1/2 teaspoon black pepper |
1 tablespoon butter |
Directions:
1. Puree 1/4 cup broth, peppers, parsley, onion and garlic in food processor. 2. Lightly brown rice in butter. Add puree and cook 5 minutes. 3. Add remaining ingredients, cover and cook 1 hour on low. |
