Yes, that is 1 CUP of Parsley! This recipe was a gift from my aunt at a wedding shower. I had to call and verify that I had the quantities right the first time I made it. But it is really fabulous and one of my favorite side dishes. Ingredients:
3 cups cooked white rice |
1 cup parsley (preferably fresh) |
1/2 cup shredded cheddar cheese |
1/3 cup chopped onion |
1/4 cup chopped green onion |
1 clove garlic, chopped |
2 eggs, beaten |
1 (14 1/2 ounce) can evaporated milk |
1/2 cup vegetable oil |
1 tablespoon salt |
1/2 teaspoon pepper |
1 teaspoon seasoning salt |
1 lemon, juice of |
Directions:
1. Mix all ingredients together and place into a greased 2 quart casserole dish. 2. Bake at 350 for 45 minutes. |
