GREEN POTATOES FROM SWEDEN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Quincy Estate in Rowlett, Texas in 1997. Ingredients:
6 large potatoes |
3/4 cup heavy cream |
1/2 cup butter |
2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
10 ounce package frozen spinach |
2 tablespoons chopped chives |
1-1/2 teaspoons dried dill |
Directions:
1. Boil potatoes until thoroughly cooked. 2. Put through potato ricer or mash well with electric mixer. 3. Add cream, butter, salt and pepper then beat until light and fluffy. 4. Cook spinach then add to mashed potatoes. 5. Mix in chives and dill then place in greased casserole dish. 6. Cover and bake for 20 minutes then serve immediately. |
