Green Pepper And Shrimp Omelet |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Willingham Estate in Fort Worth, Texas in 1984. Ingredients:
9 ounces shrimp |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1/2 medium white onion |
2 cloves garlic |
3 fine green peppers |
6 tablespoons oil |
4 eggs |
oil to grease frying pan |
Directions:
1. Peel shrimp and season with salt and pepper. 2. Finely chop onion. 3. Peel and chop garlic cloves and wash and cut peppers into thin strips. 4. Heat oil in a frying pan then fry shrimp 1 minute and remove. 5. In same oil fry garlic cloves then add onion and pepper and fry over low heat 20 minutes. 6. When soft add shrimp and cook together for a few minutes. 7. Beat eggs in a bowl then season and mix with peppers and shrimp. 8. Grease a pan and pour in egg mixture. 9. Set omelet over low heat for 5 minutes on each side. 10. Serve warm. |
