This recipe goes with Lamb Sandwiches with Green Pea Spread and Herbed Mayo Ingredients:
1 tablespoon olive oil |
1 cup finely chopped onion |
7 tablespoons water, divided |
1 (10-ounce) package frozen green peas, thawed |
2 tablespoons fresh lemon juice |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Heat oil in a medium nonstick skillet over medium heat. Add chopped onion; cook 3 minutes or until tender, stirring occasionally. Add 1/4 cup water and peas; cook 5 minutes or until peas are tender. Spoon into a blender or food processor; add remaining 3 tablespoons water, lemon juice, salt, and pepper. Process until smooth. Cover and chill. |
