I serve this often and it's very well liked in our family. Ingredients:
2 (16-ounce) cans peas, gently rinsed and drained |
1 cup finely diced cheddar cheese |
1 cup finely diced celery |
1/2 cup thinly sliced sweet pickles |
1/2 cup diced pimientos |
1/2 cup mayonnaise |
salt and pepper |
Directions:
1. In medium bowl, combine peas, cheese, celery, pickles, pimientos, mayonnaise, and salt and pepper to taste. Toss lightly to coat evenly. Cover and chill for at least 2 hours. |
