This came from a vegetarian cooking show. My family likes it and my picky son who hates everything even liked it. If you want to make it vegan, just leave out the cheese and eggg and use vegan dressing. Cook time is chill time and time to boil eggs. Ingredients:
4 cups frozen peas, cooked (not mushy, season with salt and pepper or mrs. dash, any flavor you like) |
2 celery ribs, sliced |
3 green onions, sliced |
1/4 cup red bell pepper, chopped |
1/2-1 cup thousand island dressing (amount to your preference) |
1 tablespoon nutritional yeast flakes |
salt and pepper |
1/4 cup diced red onion |
1/2 cup stuffed green olive, sliced |
3 eggs, hard boiled and chopped |
1 dash garlic powder |
1 dash onion powder |
1 cup sharp cheddar cheese, grated |
Directions:
1. Cook peas and cool (make sure they aren't mushy or over-cooked). 2. Cook eggs and cool; then peel and chop. 3. Drain well. 4. Put peas in large bowl. 5. Add all of the seasonings and mix gently. 6. Add celery and red bell peppers. 7. Add eggs and onions. 8. Add dressing (as much as you like to use). 9. Fold in cheese. 10. Chill for at least 30 minutes before serving. |
