I'm always looking for ways to sneak in veggies (and use up stuff in my fridge). Try these for brunch or even dinner.
Ingredients:
couple handfuls fresh spinach
1/4 white onion
4 cloves garlic
1/2 large zucchini
2 cups bisquick mix
1 egg
1 cup milk
finely grated cheese
butter
Directions:
1. Grate all vegetables in food processer (or by hand). Put in bowl and bot with paper towel to get rid of excess water.
2. Combine bisquick (or any pancake mix), milk and egg. Fold in veggies.
3. Fry as usual in pan.
4. Serve buttered, with a little cheese.
