Love this potato salad. Made it up yesterday for lunches etc the next few days.The jalapeno peeer gives a little kick. Ingredients:
2 lbs red potatoes |
1tb plus 2 tsp kosher salt,divided |
1-1/4 c mayonaisse (i use hellman's) |
2 tb white wine vinegar |
1-2 jalapeno peppers,chopped |
2 tsp salt.1/4 tsp ground black pepper |
6 green onions,thinly sliced |
1/4 c fresh cilantro or parsley,chopped |
Directions:
1. Cover potatoes with water in 4 qt. saucepot. Bring to boil over med-high heat. Add 1 TB sal;reduce heat to low and simmer 10 mins or till potatoes are tender. Drain and cool slightly. Slice 2. Combine mayonnaise ,vinegar,jalapeno peppers,salt and black pepper in large bowl. Stir in remaining ingredients and toss gently. |
