5-Ingredient Fix Contest Entry. The green onion really makes these potato cakes pop and adds a nice touch of color. These are fantastic served as a side dish with pork chops or ham. Also yummy for breakfast, served with eggs and bacon or sausage. Ingredients:
2 1/2 cups simply potatoes traditional mashed potatoes |
2 egg whites, slightly beaten |
4 green onions, thinly sliced |
3 tablespoons flour |
1 tablespoon vegetable oil |
Directions:
1. Prepare mashed potatoes according to package directions. Refrigerate for at least 4 hrs, or overnight before using. 2. In medium bowl combine potatoes, egg white, green onions and flour. 3. Meanwhile, heat oil in large skillet over medium high heat. 4. Drop1/4 cup potato mixture into skillet and press flat with spatula. 5. Cook 3-5 minutes, until golden brown. Flip and cook the other side, 3-5 minutes, until golden brown. 6. Keep warm in 250 F degree oven until all cakes have been made. Serve hot. |
