7 cups peeled yukon gold potato(about 21/2 lbs |
11/4c whole milk |
3/4c finely chopped green onions |
3tbs butter |
3/4tsp. salt |
1/2tsp fresh ground pepper |
Directions:
1. Place potato in lg. saucepan;cover with water. Bring to a boil. Reduce heat,and simmer 20 mins or until potato is tender;drain 2. Combine milk and onions in a small saucepan;bring to a simmer. Cook 3 minutes. Remove from heat. 3. Combine potato,milk mixture,butter,salt and pepper in a bowl;beat with a mixer at medium speed until smooth. |
