Active time: 15 min Start to finish: 2 1/4 hr In addition to being a great complement to the poached salmon, this mayonnaise is a good pair with shrimp, veal, or poached chicken breasts. Ingredients:
2 tablespoons chopped fresh chives |
1 1/2 tablespoons chopped fresh tarragon |
3 tablespoons chopped fresh flat-leaf parsley |
1 tablespoon chopped fresh chervil |
2 teaspoons chopped fresh dill |
1 tablespoon fresh lemon juice |
1 cup mayonnaise |
1/4 teaspoon salt |
1/8 teaspoon pepper |
Directions:
1. Pulse herbs in a blender with lemon juice and 1/2 cup mayonnaise until puréed. Add remaining 1/2 cup mayonnaise, salt, and pepper and blend well. 2. Transfer to a bowl and chill, covered, at least 2 hours to allow flavors to blend. 3. Cooks' note: Green mayonnaise can be chilled up to 1 day. |
