Masala is a mixture of spices and herbs used to give Indian food its distinctive flavour. You can purchase many ingredients for the masala such as dried herbs and spices but where you can, buy fresh ingredients and grind them yourself - the difference is very noticeable and the deep flavour and complex aroma is well worth it. Prepare your masala and separate into tablespoon portions and freeze individually for later use for quick and tasty Indian food. Delicious! Ingredients:
1 tablespoon ground turmeric |
1/2 tablespoon cumin seed |
1/2 tablespoon mustard seeds |
1 tablespoon coriander seed |
1 tablespoon star anise |
1/2 tablespoon clove |
6 garlic cloves |
2 tablespoons brown sugar |
1 bunch fresh coriander leaves |
2 cups onions, chopped |
1 teaspoon salt |
1/3 cup white wine vinegar |
1 cup fresh green chili, chopped |
1 tablespoon cinnamon |
1/2 cup chopped fresh ginger |
Directions:
1. Put all the ingredients into a food processor and blend until you have a smooth paste. 2. Divide the mixture in approx tablespoon size portions and freeze for later use. 3. It's as simple as that and use in any recipe that calls for masala. You will never go back to buying curry powder! |
