Vegan variation of a traditional summer staple, macaroni salad. And green happens to be my favorite color. Ingredients:
1 cup vegan mayonnaise |
2 tablespoons apple cider vinegar |
1 tablespoon mustard |
salt and pepper |
4 cups macaroni, cooked |
1 cup celery, chopped |
1/2 cup green pepper, chopped |
1/2 cup sweet pickle, chopped |
1/2 cup green onion, chopped |
Directions:
1. Cook macaroni noodles according to boxed directions. 2. Combine mayo, vinegar, mustard, salt and pepper. 3. Stir into prepared vegetables and noodles. 4. Cover and chill before serving. |
