NIce light and refreshing tapas or salad for any occasion. I love grilled goat cheese. Ingredients:
11 oz goat cheese |
1 tbsp oil |
1 bag baby green leaves |
vinaigrette |
1/2 cup extra virgin olive oil |
3 tbsp sherry vinegar |
1 tbsp honey |
salt |
pepper |
Directions:
1. Vinaigrette: 2. Dissolve salt, pepper and honey in the vinegar and beat in the extra virgin olive oil until an emulsion forms. 3. Cut the cheese into 3/4 slices, brush with oil, and grill until golden. 4. Serve onto plates, add the salad and dress with vinaigrette. |
