From Rachel Rae, adapted slightly because the husband hates chick peas. Ingredients:
1 tablespoon olive oil |
1 onion |
1 potato |
1 zucchini |
1 (15 ounce) can hominy, drained |
1 (15 ounce) can cannellini, drained |
6 cups vegetable stock |
10 ounces frozen cut green beans |
1 cup egg noodles |
Directions:
1. Cut potato & zucchini into small pieces, and chop onion. 2. Preheat olive oil in pan over medium high heat, and saute with salt and pepper (to taste) for 5-6 minutes. 3. Add hominy, cannelini, and stock and bring to a boil. 4. Stir in noodles and frozen green beans and bring to a simmer. 5. Cook 5 minutes longer, or until noodles are cooked. |
