Green Herb Salad With Champagne Vinaigrette |

I love this salad. It's so easy to make but so full of really good for your greens and a tasty vinaigrette. Ingredients:
1/4 cup extra-virgin olive oil |
1 tablespoon minced shallot |
2 tablespoons champagne vinegar |
1/4 teaspoon salt |
1/4 teaspoon freshly-ground black pepper |
1 large head butter lettuce leaves separated and torn into bite-size pieces |
1 cup fresh flat-leaf parsley leaves |
1/2 cup fresh cilantro leaves |
1/2 cup fresh chervil sprigs |
Directions:
1. In the bottom of a salad bowl combine the olive oil and shallot. 2. Add the vinegar, salt and pepper and mix well with a fork. 3. Top with the lettuce, parsley, cilantro and chervil. 4. When ready to serve toss well. 5. Mound the salad in individual bowls or on plates. |
