This dish is a healthier version of the heavier gumbo's the south offers. I am always amazed at the people who say they don't eat greens but end up loving this gumbo. This is my family and friends favorite of all favorites! Read more ! Ingredients:
1 bag of frozen mustard greens |
1 bag of frozen turnip greens |
1 bag of frozen collard greens |
2 bags of frozen spinach |
1 pound smoked sausage, sliced |
1 large onion, chopped |
1 cup celery, chopped |
1 cup sliced green onions |
1 cup diced ham |
32 oz. chicken broth |
water |
1 stick butter |
1/2 jar of dark roux or 1 cup homemade roux |
salt and pepper to taste |
1 tablespoon minced garlic |
creole spice to taste |
Directions:
1. Place frozen greens and spinach in a large stock pot and cover with broth and enough water to cover greens. 2. Bring greens to boil, lower heat, cover and cook on medium heat for 30 minutes. 3. In a large skillet, cook onions, celery, sausage, ham, and garlic in butter until onions are transparent and meats are lightly browned(about 4 minutes) 4. Add to greens and continue to cook greens for 30 minutes, adding more water if needed. 5. Whisk roux with a little warm water until smooth. 6. Bring greens to a second boil. 7. Stir in roux and spices, stirring well to make sure all roux is dissolved. 8. Lower heat and continue to cook on low/med heat for the last 30 minutes. Serve over cooked rice and with your favorite hot sauce(Crystal's) and French bread slices |
