This is one of a number of historical recipes I am posting from my cookbook collection. It is adapted from the 1953 edition of Adventures in Good Cooking, by traveling salesman and food critic Duncan Hines, and featuring recipes collected from around the USA. This recipe is from the Palace Hotel in San Francisco, where it is said to have originated as a tribute to the play The Green Goddess. Ingredients:
8 -10 anchovy fillets, finely chopped |
1 green onion, finely chopped |
2 sprigs parsley, finely chopped |
1 pinch fresh tarragon leaves, finely chopped |
3 cups mayonnaise |
1 tablespoon tarragon vinegar |
1 bunch chives, finely chopped |
Directions:
1. Combine all ingredients and mix well. |
