Lovely Tangy Green Dressing, great for pasta or potato salads. Also good for a dip for veggies or breads. Assuming 1 serving = 1/8 cup. Makes 1 1/2 cups. Recipe from Green Cuisine Cookbook, 2006 Ingredients:
1 medium avocado |
1/4 cup cider vinegar |
1/4 cup water |
1 1/2 tbsp lemon juice |
1/8 cup sunflower oil |
1 1/2 tbsp rice syrup |
1/2 tsp salt |
1 pinch cayenne |
1/2 garlic clove, minced |
1 tbsp fresh basil, chopped |
1/8 cup parsley |
1/8 cup green onion |
1/4 cup spinach |
Directions:
1. Half the avocado, remove the pit, scoop the flesh into the blender, add everything else and blend very thoroughly. |
