The ubiquitous Green Goddess Dressing. This version, however, is the type served at San Francisco's Palace Hotel in the 20s and 30s. (Chef Alfred Bohn) Ingredients:
10 anchovy fillets |
2 tsp garlic oil |
1/4 c white onion, diced very fine |
3 c mayonnaise |
2 tbsp fresh parsley |
2 tbsp fresh tarragon |
Directions:
1. Coat a bowl with the garlic oil (or a clove of garlic) 2. Mix the anchovies, onion, herbs, and mayonnaise in the bowl. 3. If desired, thin slightly with tarragon vinegar. |
