The William Archer play The Green Goddess had a run in San Francisco in the 1920s. Star George Arliss, dining at the Palace Hotel, was served a specially created salad with this green-hued dressing. Ingredients:
1 cup mayonnaise |
3 anchovy fillets, minced |
1 chopped scallion |
2 tablespoons chopped fresh parsley |
2 tablespoons chopped fresh chives |
1 tablespoon tarragon vinegar |
1 teaspoon chopped fresh tarragon |
salt and pepper |
Directions:
1. Purée all ingredients in a food processor until smooth. Season with salt and pepper. |
