Green Goddess Cucumber Salad |

a different spin on cucumber salad. This is really good despite the few steps involved. Ingredients:
2 medium cucumbers |
1/2 cup cooked green beans diced |
fresh chopped chives ( garnish ) |
dressing |
6 spring watercress |
6 spinach leaves |
6 stalks of fresh tarragon |
2/3 cup mayonaisse |
1 tsp lemon juice |
salt and pepper to taste |
Directions:
1. Simmer the watercress, spianch and tarragon in water a few mins to soften 2. drain, rinse in cold water 3. Press out water and mash into a pulp 4. Add to mayo with lemon juice 5. Blend well and chill 6. Cut unpeeled cucumbers in half lengthwise 7. Place in pan, cover with water, simmer 2 minutes 8. Remove , drain and cool in ice water 9. drain very well 10. When cold hollow out centers leaving a shell about 1/4 inch thick 11. Fill the hollows with the diced beans and cover with the chilled dressing and garnish with the chives |
