Yummy, quick and easy. Found on the back of a Del Monte Green Enchilada sauce and I substituted the cheeses with non fat and low fat options. Ingredients:
2 cups enchilada sauce |
10 6 flour tortillas |
1 lb chicken breast |
8 oz fat free cream cheese |
1 cup green chilies |
1/4 cup shredded cheddar cheese |
Directions:
1. Cook chicken cut up 2. Add cream cheese and chilis- stir till melted 3. Use this as filling for enchiladas 4. Wrap and put in casserole dish, cover with sauce 5. Sprinkle with cheese 6. Bake for 20 minutes at 350 |
