This is from Simply in Season. Ingredients:
1 cup ricotta cheese |
1 cup cooked broccoli or 1 cup spinach, chopped fine |
salt, pepper, parsley to taste |
1 small egg, beaten |
1/2 cup flour |
vegetable broth |
Directions:
1. In a medium-sized mixing bowl, combine all the ingredients. 2. Roll the dough into 1 balls and roll them in flour on a flat surface. 3. Cook gently in boiling water or vegetable broth for about 8-10 minutes. 4. Serve with butter and grated cheese. |
