A long time favor recipe that is perfect with most meat dishes but I especially like it with pork chops. It's easy and quick to make which is another reason it's a favorite! Try it, you'll like it! Ingredients:
2 cups uncooked rice (instant)
2 cups water
1 cube butter or margarine
1-1/2 lbs jack cheese; cubed
1-1/2 cup sour cream
2 cans diced ortega green chili's (4oz each)
1 cup longhorn cheddar cheese
Directions:
1. Add butter to water and bring to a boil; stir in rice, cover and let sit for 8 min or until rice is cooked.
2. In large bowl add jack cheese, hot rice, 1 cup sour cream, and chili's.
3. Add rest of sour cream on top** after putting in oblong casserole dish.
4. Grate longhorn cheese and sprinkle on top of casserole.
5. Cover with foil and bake at 300ยบ for 1 hour.
6. ** I omit the sour cream on top.
