I remember the first time my Mama made this, I loved it! I make it for my family now and they like it, too! Goes well with hash browns and toast... Ingredients:
pastry for 9-inch pie |
1/2 pound ground beef |
1/4 cup chopped onion |
1 (4-ounce) can chopped green chili peppers, drained |
2 cups (8 ounces) shredded monterey jack cheese |
3 large eggs, beaten |
1 cup milk |
1/4 teaspoon salt |
dash of garlic powder |
dash of cayenne |
Directions:
1. Line a 9-inch quiche dish with pastry; trim excess pastry around edges. 2. Prick bottom and sides of quiche shell with a fork; bake at 375 degrees for 10 minutes. 3. Remove from oven, and let cool on rack. 4. Cook beef and onion until beef is browned and onion is tender, stirring to crumble; drain well on paper towels. 5. Sprinkle ground beef mixture into pastry shell; top with green chilis and cheese. 6. Combine eggs, milk, salt, garlic powder, and cayenne (if using), mixing well. 7. Pour into pastry shell. 8. Bake at 375 for 35 minutes or until set. 9. Yield: One 9-inch quiche |
