Green Chili Enchilada Casserole |

Great casserole recipe from my sister-in-law. Once mixed does not store well, as the chips get soggy, but the meat mixure can be stored in frig to use later. Ingredients:
1 lb ground beef |
8 ounces velveeta cheese |
1/2 cup onion (chopped) |
8 ounces ortega green chilies (small can chopped) |
8 ounces cheddar cheese (shredded) |
2 ounces pimientos (small jar chopped with juice) |
1 (12 ounce) can cream of chicken soup |
1 (12 ounce) package tortilla chips |
Directions:
1. Brown ground beef and onion. Drain. 2. Add chilies, pimientos, soup, Velveeta cheese. Heat until cheese is melted. 3. Layer in a 9x13 baking dish, 1/2 chips, all meat mixture, cheddar cheese, remaining chips. 4. Bake in 350°F oven until cheese is melted. |
